Chunky Mediterranean Salad

Ingredients:

4 Tbsp red wine vinaigrette 1 cup pitted Kalamata olives
2 cups cherry tomatoes 2 cups fire roasted red peppers
2 cups chopped cucumbers 1 cups crumbled Feta cheese
1 cup chopped red onions 4 cup spinach

Directions:

Be sure to keep ingredients separate while preparing.
Drain and rinse both the Kalamata olives and the fire-roasted red peppers. Make the dressing by combining equal parts extra virgin olive oil and red wine vinegar, and stirring vigorously. Equally distribute the prepared ingredients into 4 mason jars. To ensure the freshest salad, add the ingredients in the following sequence: vinaigrette, cherry tomatoes, cucumbers and red onions, Kalamata olives, roasted red peppers, crumbled Feta, and spinach last. When ready to eat, gently shake the Mason jar, pour out into a salad bowl, and enjoy!
